Philosophy

The Ultimate Subtraction

The Four Elements

Salt

Draws out excess moisture, concentrates umami

Water

Gives each grain of rice its finest firmness and luster

Vinegar

Cuts the source of odor, aligns the cells of the fish

Time

Reads the single moment when umami rises

With these four alone, the fish transforms. Nothing more needs to be added.

The craftsman's intuition passed down under the name of tradition.
The so-called world of "watch and learn."

In truth,
reading the changes in fish,
controlling temperature,
manipulating fermentation,
even reading the reactions of the guest's body,
an extremely advanced science.

All of it is for
the umami of the fish, the acidity of the vinegared rice, and the craftsman's timing
to be completed for just an instant in the mouth.

Remove what hinders the fish,
leave only the umami at its core.

For the fish, and for the one who eats,
create the state with the least burden.

There,
"The Ultimate Subtraction"
exists as the philosophy that Edomae itamae have protected.

Ingredients

We source the finest fish of the day directly from trusted wholesalers at Tsukiji Market, with whom we have built a relationship spanning over 50 years. Prioritizing seasonality and freshness above all, we value the discerning eye that selects truly delicious fish.

Technique

The work of Edomae sushi is not about "adding" but "subtracting." To bring out the inherent umami of the ingredients to the fullest, we never add anything unnecessary. You can feel the precision born from 50 years of experience right across the counter.

First Visit

For First-Time
Guests

We've compiled answers to common questions to ease any concerns before your visit. Please feel free to contact us by phone or LINE for any other inquiries.

Absolutely. First-time guests are warmly welcomed. We guide you through the omakase flow, serving each piece according to the day's freshest catch. No strict etiquette required — feel free to ask the chef questions at the counter.

Rather than dividing the meal by the clock, we serve each piece at its ideal moment, matching the natural flow of your dining experience. Please take your time and savor the intervals and lingering flavors unique to Edomae sushi.

An English menu is available. On days when someone who speaks English is here, we are glad to tell you which piece is from which fish, and why it is served in this season. Guests from abroad have sometimes told us they left knowing more about sushi than when they arrived. While we do not offer a fish-free course, we do have items like cucumber rolls (kappa-maki) that a non-fish-eating guest can enjoy, so you are welcome to bring them along. Please let us know at the time of your reservation.

For guests with allergies, we will do our best to accommodate within the possible range. Please be sure to inform us of any allergy details when making your reservation. However, please note that our kitchen handles seafood, crustaceans, shellfish, wheat, soybeans, and other ingredients in a single kitchen, making it difficult to completely separate cooking utensils and workspaces. Therefore, it is not possible to completely prevent trace contamination. For this reason, guests with severe allergies or those who may experience serious symptoms even from trace contamination may not be able to be accommodated due to safety concerns. We sincerely ask for your understanding.

We are an Edomae sushi restaurant, so we do not offer a fish-free course. However, we do have simple items like kappa-maki (cucumber roll) that you can enjoy, so your party is welcome to visit together. Please let us know before your visit and we will prepare accordingly.

Edomae sushi is experienced through the delicate aromas of fish, vinegared rice, nori, and wasabi. We kindly ask guests to refrain from wearing strong perfumes, as they may affect the experience of other diners.

Food photography is permitted. However, please refrain from using flash or taking photos that include other guests.

We accept cash and major credit cards (VISA, Mastercard, JCB, AMEX).

Cancellations or changes to party size must be made by the day before. Same-day cancellations or no-shows may be subject to the full course charge. This policy protects not only our ingredients, but also the valuable resource of time and seats.

No formal dress code. We simply ask that you avoid shorts and sandals; a collared shirt is more than enough. Please come as you are without overthinking it.

We have no age limit, but this is a quiet room, and we ask that children be comfortable sitting through a meal. We also have table seating, and lunchtime is usually the easier hour for families.
